Nothing beats homemade pizza with a crisp base straight out of a wood burning oven.
Unfortunately, having a pizza oven in the kitchen or back yard is a luxury not all of us enjoy. Making homemade pizzas in a normal oven with a pizza stone works very well if you get the temperature up high enough. If not, using a pizza stone on a BBQ/ braai is your next best and I have personally had excellent results with this.
But here’s an even quicker fix:
If you’re having a craving for some quick crunchy melted cheese goodness, then Pizza Toast is the way forward.
Heat your oven as high as it will go and move your oven rack to the the top shelf of the oven.
Slice your favourite bread, mine being sourdough, and toast the slices. Experiment with it. You could even use bagels, baguette or seed loaf if you’d like to go the low carb, Banting friendly route.
Once toasted, top with Italian crushed tomatoes. I add the crushed tomatoes to a small saucepan in which i’d sautéed some fresh garlic and a shallot. Heat the sauce and season with salt, pepper.
Onto the tomato base add some mozzarella, bocconcini or your favourite cheese, spices and toppings.
Pop in the oven until they the cheese is bubbling, browning and smelling glorious.
Top with basil, rocket, avocado or whatever your tummy is telling you and eat immediately!
